Banana Apple Pancakes
Ingredients:
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 ripe banana, mashed
- 1 apple, peeled and grated
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter (plus extra for cooking)
- 1 teaspoon vanilla extract
Instructions:
- Prepare the batter:
In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon. - Mix wet ingredients:
In another bowl, mash the banana and combine it with the grated apple, milk, egg, melted butter, and vanilla extract. - Combine:
Pour the wet ingredients into the dry ingredients. Gently mix until just combined (do not overmix). - Cook the pancakes:
Heat a non-stick skillet or griddle over medium heat and lightly butter it.
Pour about 1/4 cup of batter for each pancake. Cook until bubbles form on the surface (about 2–3 minutes), then flip and cook another 1–2 minutes until golden brown. - Serve:
Serve warm with maple syrup, honey, or a sprinkle of powdered sugar. Optional: top with sliced bananas, apple slices, or nuts.
