  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, mash the ripe bananas until smooth.
  4. To the mashed bananas, add the melted coconut oil, sugar, eggs, and vanilla extract. Stir until well combined.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing gently until just combined.
  6. Fold in the crushed pineapple and optional macadamia nuts.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula. Optionally sprinkle shredded coconut on top.
