1 cup vanilla pudding mix
1/2 cup sweetened condensed milk
1 teaspoon vanilla extract
2 cups mixed tropical fruits (such as mango, pineapple, and kiwi), diced
1 banana, sliced
1 package (about 14-16 ounces) of Maria cookies or any plain cookies
1/4 cup fresh fruit juice (such as orange or pineapple juice)
Instructions
In a large mixing bowl, combine the heavy whipping cream, vanilla pudding mix, sweetened condensed milk, and vanilla extract. Use an electric mixer to whip the ingredients together until soft peaks form, about 3-5 minutes.
Gently fold in the diced tropical fruits and sliced bananas into the cream mixture using a spatula.
In a separate shallow dish, pour the fresh fruit juice. Quickly dip each Maria cookie into the juice, soaking them for about 1-2 seconds.
In a rectangular or square dish, layer the dessert starting with soaked cookies, followed by a layer of the creamy fruit mixture. Repeat the process, finishing with a cream layer on top.
Cover the dish and refrigerate for at least 4 hours or overnight.
Once chilled, slice the Carlota into squares for serving and optionally garnish with fresh fruit.
