Cheesy Dorito Taco Casserole

This cheesy Dorito taco casserole is the kind of comfort food that brings everyone to the table fast. Crunchy Doritos, seasoned ground beef, melty cheese, and bold taco flavors come together in one easy, satisfying bake. It’s perfect for busy weeknights, game days, or whenever you’re craving something cozy, indulgent, and full of flavor. Every bite has that irresistible mix of creamy, crunchy, and savory that keeps you going back for more.

Ingredients:

1 lb ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 packet taco seasoning
1 cup salsa (mild or medium)
1 cup sour cream
2 cups shredded cheddar or Mexican blend cheese
1 family-size bag Doritos, lightly crushed
Optional toppings: diced tomatoes, sliced jalapeños, green onions, black olives

Instructions:

Preheat the oven to 350°F (175°C) and lightly grease a medium casserole dish.

In a large skillet over medium heat, cook the ground beef with the chopped onion until the meat is browned and fully cooked. Drain excess grease if needed, then add the garlic and cook for about 30 seconds until fragrant.

Stir in the taco seasoning and salsa, mixing well so the beef is evenly coated. Reduce the heat and let the mixture simmer for 2–3 minutes. Remove from heat and gently fold in the sour cream until creamy and smooth.

Spread half of the crushed Doritos evenly across the bottom of the prepared casserole dish. Spoon the beef mixture over the chips, spreading it out evenly. Sprinkle one cup of shredded cheese on top, then add the remaining Doritos, followed by the rest of the cheese.

Bake uncovered for 20–25 minutes, or until the cheese is fully melted and bubbly around the edges. Let the casserole rest for a few minutes before serving so it sets nicely.
