1.5 to 2 pounds Pork Tenderloin, trimmed of excess fat
4 cloves Garlic, minced (or 2 teaspoons of garlic powder)
2 tablespoons Italian seasoning (or a mix of dried thyme, rosemary, and oregano)
1 cup Chicken Broth (or vegetable broth for a lighter flavor)
Salt and Pepper, to taste
Instructions
Start by trimming any excess fat from the pork tenderloin.
In a small bowl, mix the minced garlic, Italian seasoning, salt, and pepper. Rub this mixture all over the pork tenderloin.
Position the seasoned pork tenderloin in the slow cooker. Pour the chicken broth around the meat.
Cover the slow cooker with its lid and set it to low. Cook for 6-8 hours or until the pork is fork-tender and reaches an internal temperature of 145°F (63°C).
Once cooked, remove the pork tenderloin from the slow cooker and let it rest for about 10 minutes before slicing.
Slice the pork tenderloin into medallions and serve with the broth as a sauce.
