4 cod fillets (about 6 ounces each), preferably wild-caught
2 tablespoons olive oil, extra virgin recommended
1 teaspoon salt
1/2 teaspoon black pepper
4 tablespoons unsalted butter
4 cloves garlic, minced
1/4 cup fresh lemon juice (about 2 lemons)
1 teaspoon lemon zest
2 tablespoons fresh parsley, chopped
1 teaspoon dried Italian herbs (optional)
Instructions
Preheat your oven to 400°F (200°C).
Lightly grease a baking dish with olive oil or non-stick spray. Place the cod fillets in the dish, ensuring they are evenly spaced.
Drizzle the olive oil over the cod fillets. Sprinkle salt and black pepper evenly across the fish.
In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant.
Stir in the lemon juice and zest, along with the dried Italian herbs if using. Simmer for another minute.
Pour the lemon garlic sauce generously over the cod fillets.
Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the fish flakes easily with a fork.
Once done, remove the dish from the oven and let it rest for a few minutes. Serve warm, drizzled with any remaining sauce.
