Ingredients
Scale:
1 ½ cups rolled oats
½ cup unsweetened cocoa powder
½ cup powdered sugar
½ cup ground flaxseed (optional)
1 cup creamy peanut butter
½ cup honey or maple syrup
1 teaspoon vanilla extract
½ cup dark chocolate chips
Sea salt or crushed nuts for garnish (optional)
Instructions
In a large mixing bowl, combine the rolled oats, cocoa powder, powdered sugar, and ground flaxseed, if using. Stir well until evenly mixed.
In a separate bowl, combine the peanut butter, honey (or maple syrup), and vanilla extract. Mix thoroughly until smooth.
Pour the wet mixture into the dry ingredients. Use a spatula or your hands to mix everything together until fully combined.
Scoop out about a tablespoon of the mixture and roll it between your palms to form a ball. Place each ball on a parchment-lined baking sheet.
Place the baking sheet in the refrigerator for at least 30 minutes.
While the balls are chilling, melt the dark chocolate chips in a microwave-safe bowl.
Once the peanut butter balls have chilled, dip each ball into the melted chocolate until fully coated. Place them back on the parchment paper.
If desired, sprinkle a pinch of sea salt or crushed nuts on top of the chocolate-coated balls before the chocolate sets.
Allow the chocolate to set in the refrigerator for another 15-20 minutes.
