  1. In a large mixing bowl, combine the rolled oats, cocoa powder, powdered sugar, and ground flaxseed, if using. Stir well until evenly mixed.
  2. In a separate bowl, combine the peanut butter, honey (or maple syrup), and vanilla extract. Mix thoroughly until smooth.
  3. Pour the wet mixture into the dry ingredients. Use a spatula or your hands to mix everything together until fully combined.
  4. Scoop out about a tablespoon of the mixture and roll it between your palms to form a ball. Place each ball on a parchment-lined baking sheet.
  5. Place the baking sheet in the refrigerator for at least 30 minutes.
  6. While the balls are chilling, melt the dark chocolate chips in a microwave-safe bowl.
  7. Once the peanut butter balls have chilled, dip each ball into the melted chocolate until fully coated. Place them back on the parchment paper.
  8. If desired, sprinkle a pinch of sea salt or crushed nuts on top of the chocolate-coated balls before the chocolate sets.
  9. Allow the chocolate to set in the refrigerator for another 15-20 minutes.
