1 cup fresh strawberries, hulled and mashed
2-3 tablespoons lemon juice (freshly squeezed)
1 cup unsalted butter, softened to room temperature
4 cups powdered sugar, sifted
1/4 cup heavy cream (optional)
1 teaspoon vanilla extract
Instructions
Wash and hull your fresh strawberries. Mash them until smooth.
In a large mixing bowl, cream the softened butter until light and fluffy, about 3-4 minutes.
Gradually add sifted powdered sugar, mixing on low speed until combined. Then add heavy cream if using.
Incorporate mashed strawberries, lemon juice, and vanilla extract into the frosting.
Adjust the consistency by adding more cream or powdered sugar as needed.
Taste and adjust the flavor with additional lemon juice or sugar to preference.
If needed, chill the frosting for 15-20 minutes before using.
