2 medium zucchinis
1 cup breadcrumbs
½ cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
½ teaspoon salt
¼ teaspoon black pepper
2 large eggs
1 tablespoon olive oil
Instructions
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
Wash and dry the zucchinis thoroughly. Cut them into sticks about ½ inch wide and 3 to 4 inches long.
In a medium bowl, whisk together the eggs and olive oil until well combined.
In a separate bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, oregano, salt, and pepper. Mix well.
Dip each zucchini stick into the egg mixture, then roll it in the breadcrumb mixture, pressing gently to ensure an even coating. Place the coated sticks on the prepared baking sheet.
Bake the zucchini sticks in the preheated oven for 20-25 minutes or until golden brown and crispy, flipping halfway through.
