St■ Biscuits & Gravy is a beloved dish that perfectly embodies the essence of southern comfort food. It combines the flaky, buttery goodness of homemade biscuits with a rich and creamy sausage gravy, making it a hearty treat for any meal of the day.
Ingredients
Scale:
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/4 cup unsalted butter, cold and cubed
3/4 cup buttermilk, chilled
1 pound breakfast sausage (bulk or casings removed)
1/2 cup shredded cheese (cheddar or your choice)
1/4 cup chopped green onions (optional)
1/4 cup unsalted butter
1/4 cup all-purpose flour
3 cups milk (whole milk preferred for creaminess)
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon paprika (optional)
Instructions
Preheat your oven: Set your oven to 425°F (220°C) to get it ready for baking.
Make the biscuit dough: In a large mixing bowl, combine the flour, baking powder, salt, and baking soda. Whisk these dry ingredients together until well mixed.
Add the butter: Using a pastry cutter or your fingers, work the cold, cubed butter into the flour mixture until it resembles coarse crumbs.
Incorporate buttermilk: Pour the chilled buttermilk into the dry mixture. Stir gently until just combined.
Prepare the filling: In a skillet over medium heat, cook the breakfast sausage until browned and cooked through. Remove from heat and stir in the shredded cheese and green onions.
Roll out the dough: On a floured surface, roll out the biscuit dough to about 1/2 inch thick. Use a biscuit cutter to cut out circles.
Stuff the biscuits: Place a spoonful of the sausage filling in the center of half of the dough circles. Place another dough circle on top and pinch the edges firmly to seal.
Bake: Arrange the st■ biscuits on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until golden brown.
Prepare the gravy: In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook until it turns a light golden color. Slowly add the milk, whisking continuously.
Serve: Once the biscuits are baked, remove them from the oven and arrange on plates. Ladle the gravy over the top.
