This dish combines the rich, savory flavors of smoked brisket with the sweetness of bourbon-infused maple syrup, all nestled between crispy, golden-brown waffles and melted cheese.

2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 large eggs
1 3/4 cups buttermilk
1/2 cup melted butter
1 teaspoon vanilla extract (optional)
1 pound smoked brisket, sliced thinly
1/4 cup bourbon
1/2 cup pure maple syrup
1 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
Salt and pepper to taste
1 teaspoon garlic powder
8 slices of sharp cheddar cheese
2 tablespoons butter, softened
Optional: a sprinkle of smoked paprika
Instructions
In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined. In another bowl, beat the eggs and add the buttermilk and melted butter, mixing until smooth. Combine wet and dry ingredients until just mixed; do not overmix.
Preheat your waffle iron according to the manufacturer's instructions. Lightly grease it to prevent sticking.
Pour the batter into the preheated waffle iron and cook until golden brown and crisp, about 5-7 minutes. Set aside the waffles in a warm oven.
In a medium saucepan, combine the bourbon, maple syrup, Dijon mustard, Worcestershire sauce, garlic powder, salt, and pepper. Cook over medium heat for 5-7 minutes until slightly thickened. Let cool slightly.
On one waffle, layer 2 slices of cheddar cheese, followed by the sliced brisket and drizzle with bourbon-maple sauce. Top with another 2 slices of cheese and another waffle.
Heat a skillet over medium heat. Spread softened butter on the outside of the waffle sandwich. Grill for 3-4 minutes on each side until golden brown and cheese is melted.
Cut in half and serve warm, drizzled with additional bourbon-maple sauce if desired.
