1 1/2 pounds ground beef
1 cup breadcrumbs
1/2 cup milk
1 large egg
2 teaspoons Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
2 large onions, thinly sliced
2 tablespoons unsalted butter
1 tablespoon olive oil
1 teaspoon sugar
1/2 cup beef broth
1 teaspoon thyme
1 cup shredded Swiss cheese
1/4 cup chopped fresh parsley, for garnish
Instructions
In a skillet over medium heat, melt the butter and olive oil. Add sliced onions and sugar, cooking and stirring gently for about 20 minutes until they are golden brown and caramelized. Set aside.
In a large bowl, combine ground beef, breadcrumbs, milk, egg, Worcestershire sauce, salt, and pepper. Mix until well combined. Add half of the caramelized onions to the mixture and combine thoroughly.
Shape the meat mixture into a loaf and place it in your slow cooker. Pour beef broth over the meatloaf and sprinkle thyme on top.
Cover and cook on low for 6-7 hours, or until the meatloaf is cooked through and reaches an internal temperature of 160°F.
Approximately 15 minutes before the end of the cooking time, sprinkle the remaining caramelized onions and Swiss cheese over the top of the meatloaf, allowing the cheese to melt.
