2 cups all-purpose flour
2 cups granulated sugar
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1 teaspoon salt
1 cup vegetable oil
1 cup buttermilk (or substitute with regular milk mixed with 1 tablespoon of vinegar)
2 large eggs
2 teaspoons vanilla extract
1 cup boiling water
1/2 cup unsalted butter, softened
2/3 cup unsweetened cocoa powder for frosting
3 cups powdered sugar, sifted
1/3 cup milk
1 teaspoon vanilla extract for frosting
Instructions
Preheat your oven to 350°F (175°C). Grease and flour a 13x18-inch sheet cake pan.
In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt until well combined.
Add the oil, buttermilk, eggs, and vanilla extract to the dry ingredients. Mix until smooth, about 2 minutes on medium speed.
Carefully stir in the boiling water until completely mixed.
Pour the batter into the prepared sheet pan. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Once baked, remove from the oven and let cool in the pan for about 10 minutes. Then, transfer to a wire rack to cool completely.
While the cake cools, prepare the frosting by beating the softened butter until creamy. Gradually add the cocoa powder and powdered sugar, alternating with the milk.
Once the cake has cooled completely, spread the frosting evenly over the top using a spatula.
