Instructions

  1. If you are using a steak marinade, marinate your ribeye steaks for at least 30 minutes at room temperature. If not marinating, season both sides of the steaks generously with salt and pepper.
  2. In a large skillet or cast iron pan, heat the olive oil over medium-high heat until shimmering.
  3. Carefully place the seasoned ribeye steaks in the hot pan. Sear for 4-5 minutes on one side until a golden crust forms. Flip the steaks and cook for an additional 3-4 minutes for medium-rare.
  4. Once cooked, transfer the steaks to a plate and cover loosely with aluminum foil to rest for 5-10 minutes.
  5. Using the same skillet, reduce the heat to medium. Add the butter followed by the sliced onions. Sauté for about 5-7 minutes until the onions are soft and beginning to caramelize.
  6. Incorporate the sliced mushrooms into the pan with the onions. Add the balsamic vinegar, thyme, salt, and pepper. Continue to cook for another 5-6 minutes.
  7. Slice the rested ribeye steaks against the grain and serve topped with the sautéed onions and mushrooms.
