Ingredients
Scale:
1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
¼ cup granulated sugar
16 oz cream cheese, softened
1 cup powdered sugar
1 tsp vanilla extract
1 cup heavy whipping cream
1 cup fresh strawberries, hulled and sliced
1 cup fresh blueberries
1 cup fresh raspberries
Instructions
In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are fully coated and resemble wet sand.
Line an 8x8 inch baking pan with parchment paper for easy removal. Press the crumb mixture firmly into the bottom of the pan using the back of a measuring cup.
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2 minutes.
Gradually add in the powdered sugar and vanilla extract, mixing until fully combined and no lumps remain.
In a separate bowl, whip the heavy cream until stiff peaks form (approximately 4-5 minutes).
Gently fold the whipped cream into the cream cheese mixture in parts to maintain fluffiness.
Pour the cheesecake filling over the chilled crust and spread it evenly with a spatula.
Cover the pan with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
Once set, arrange the strawberries, blueberries, and raspberries on top of the cheesecake.
Using a sharp knife, cut the cheesecake into bars and serve chilled.
