Ingredients
Scale:
1 ½ cups chocolate cookie crumbs (such as Oreo or chocolate graham crackers)
½ cup unsalted butter, melted
2 tablespoons granulated sugar
1 cup creamy peanut butter (preferably natural)
1 cup powdered sugar, sifted
1 cup heavy whipping cream
1 teaspoon vanilla extract
Chocolate shavings or curls (for topping)
Chopped peanuts (for topping)
Whipped cream (optional, for topping)
Instructions
In a medium bowl, combine the chocolate cookie crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated and resemble wet sand.
Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Chill the crust in the refrigerator for at least 30 minutes to set.
In a large mixing bowl, use an electric mixer to beat the creamy peanut butter and powdered sugar together until smooth.
In another bowl, whip the heavy cream and vanilla extract until soft peaks form.
Gently fold the whipped cream into the peanut butter mixture until no streaks remain.
Spoon the peanut butter filling into the chilled chocolate crust and smooth the top.
Cover the pie and refrigerate for at least 4 hours, or overnight.
Once set, remove the pie from the refrigerator, top with chocolate shavings, chopped peanuts, and whipped cream if desired. Slice into wedges and enjoy.
