2 ripe peaches, pitted and chopped
1 cup fresh basil leaves, packed
1/4 cup pine nuts, toasted
1/2 cup grated Parmesan cheese
1/2 cup extra virgin olive oil
1 clove garlic, minced
Salt and pepper to taste
4 slices artisan bread
8 ounces burrata cheese
2 cups arugula
Balsamic glaze for drizzling
Instructions
Prepare the Peach Pesto: In a food processor, combine the chopped peaches, basil leaves, pine nuts, Parmesan cheese, and minced garlic. Pulse until coarsely blended.
Emulsify: With the processor running, slowly drizzle in the olive oil until the pesto reaches a smooth consistency. Season with salt and pepper to taste.
Toast the Bread: Preheat a skillet over medium heat. Lightly brush each slice of bread with olive oil and toast until golden brown, about 2-3 minutes on each side.
Assemble the Sandwich: Spread a generous layer of peach pesto on two slices of the toasted bread. Top with torn pieces of burrata cheese and a handful of arugula.
