4 large bell peppers, any color, tops sliced off and seeds removed
8 oz of penne or your preferred pasta, cooked al dente
1 cup of shredded mozzarella cheese
2 cups of marinara sauce
1 tablespoon of fresh basil, chopped, plus extra for garnish
Salt and pepper to taste
1 tablespoon of olive oil for drizzling
Instructions
Preheat your oven to 375°F (190°C).
Prepare the bell peppers by slicing off the tops and removing the seeds. Arrange them upright in a baking dish.
In a large bowl, combine the cooked pasta, one and a half cups of marinara sauce, half of the mozzarella cheese, and the chopped basil. Mix until everything is well-coated. Season with salt and pepper according to taste.
Carefully fill each bell pepper with the pasta mixture, pressing gently with a spoon to ensure each one is well-packed. Drizzle a little olive oil over the top.
Pour the remaining marinara sauce over the st■ peppers and sprinkle with the rest of the mozzarella cheese.
Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and golden brown.
