2 cups fresh orange juice (about 4-5 medium oranges)
1/2 cup granulated sugar
1/4 cup cornstarch
1/4 teaspoon salt
1 tablespoon orange zest
2 tablespoons unsalted butter
1/2 teaspoon vanilla extract
1 cup whipped cream

Instructions
Begin by juicing the fresh oranges to yield about 2 cups of juice. Strain the juice to remove any pulp or seeds for a smoother pudding.
In a medium saucepan, combine the granulated sugar, cornstarch, and salt. Gradually whisk in the orange juice until the mixture is smooth and there are no lumps.
Place the saucepan over medium heat. Stir continuously until the mixture begins to thicken and comes to a gentle boil, approximately 5-7 minutes. The mixture should coat the back of a spoon when ready for the next step.
Once boiling, reduce the heat to low and cook for an additional 2 minutes, stirring constantly to prevent scorching.
Remove the saucepan from the heat and stir in the orange zest, butter, and vanilla extract until the butter has melted and the mixture is well combined.
Pour the pudding into serving dishes and allow it to cool to room temperature. Cover with plastic wrap (pressing it onto the surface of the pudding to prevent a skin from forming) and refrigerate for at least 2 hours.
Before serving, top each pudding with a generous dollop of whipped cream and garnish with orange slices and a sprinkle of zest for added color and flavor.
