1 can (15 oz) of tuna, preferably packed in olive oil or water, drained
2 large cucumbers, diced
1 cup cherry tomatoes, halved
½ red onion, finely diced
½ bell pepper (red or yellow), diced
¼ cup Kalamata olives, pitted and sliced
¼ cup feta cheese, crumbled (optional)
¼ cup extra virgin olive oil
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 teaspoon dried oregano
Salt and pepper to taste
Instructions
In a medium-sized mixing bowl, add the drained tuna. Use a fork to gently break it into large chunks.
Dice the cucumbers, cherry tomatoes, red onion, and bell pepper into bite-sized pieces. Add them to the bowl with the tuna.
