Mango Delight is a luscious treat that captures the essence of summer with its vibrant, tropical flavors. The sweet, honey-like taste of fresh mangoes combined with creamy textures creates a dessert that is not only delicious but also visually stunning.
Ingredients
Scale:
4 ripe mangoes, peeled, pitted, and diced (about 4 cups)
1 cup coconut cream (or heavy cream for non-vegan version)
1/2 cup granulated sugar (adjust based on mango sweetness)
1 teaspoon vanilla extract
2 tablespoons lime juice (freshly squeezed for best flavor)
1/2 cup shredded coconut (toasted for added flavor)
Fresh mint leaves (for garnish)
Optional: additional diced mango for garnish
Instructions
Begin by preparing the mangoes. Cut the ripe mangoes in half, removing the pit, and then scoop the flesh out with a spoon. Dice the mango flesh into small cubes and set aside.
In a blender or food processor, combine the diced mangoes, coconut cream, granulated sugar, vanilla extract, and lime juice. Blend until smooth and creamy.
Taste the mixture and adjust the sweetness by adding more sugar if desired. Blend again briefly to combine.
Pour the mango mixture into a serving dish or individual cups, smoothing the top with a spatula. Refrigerate for at least 2 hours to allow it to set.
Meanwhile, prepare the topping. In a small frying pan over medium heat, toast the shredded coconut until golden brown, stirring frequently.
Once the Mango Delight has set, remove it from the refrigerator. Sprinkle the toasted coconut over the top and garnish with fresh mint leaves and extra diced mango.
Serve chilled and enjoy the tropical flavors of your Mango Delight!
