These irresistible rolls are not just a side dish; they can be the star of any meal, whether served at a family gathering, a holiday feast, or as a comforting snack.
Ingredients
Scale:
3 cups all-purpose flour
1 tablespoon sugar
1 teaspoon salt
2 teaspoons active dry yeast
1 cup mashed potatoes (from about 2 medium potatoes)
1/4 cup milk, warmed
1/4 cup unsalted butter, melted
1 large egg
1 tablespoon melted butter for brushing (optional)
Fresh herbs (like rosemary or thyme) for garnish (optional)
Garlic powder for added flavor (optional)
Instructions
Begin by boiling the potatoes until fork-tender, about 15-20 minutes. Drain and mash without adding any milk or butter to keep them dry and fluffy. Allow the mashed potatoes to cool to room temperature.
In a small bowl, mix the warm milk with the sugar and yeast. Let it sit for about 5-10 minutes until foamy.
In a large mixing bowl, whisk together the flour and salt until well combined.
In another bowl, combine the mashed potatoes, melted butter, and egg. Add the activated yeast mixture, stirring until well combined.
Gradually add the wet mixture to the dry ingredients, mixing until a soft dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm area for about 1 hour, or until doubled in size.
Once risen, punch down the dough and divide it into 12 equal pieces. Shape each piece into a ball.
Place the shaped rolls on a parchment-lined baking sheet, cover with a cloth, and let them rise for another 30-45 minutes.
Preheat your oven to 375°F (190°C) during the last 15 minutes of the second rise.
Bake the rolls in the preheated oven for 18-20 minutes or until they are golden brown.
Remove from the oven and brush with melted butter. Allow to cool slightly before serving.
