Instructions

  1. In a large bowl, sift together flour, salt, and sugar. Mix well.
  2. Add the cold, cubed butter to the dry mixture. Using a pastry cutter or your fingers, cut or rub the butter into the flour until the mixture resembles coarse crumbs.
  3. Gradually add the ice water, stirring with a fork until the dough starts to come together. Do not overmix.
  4. Turn the dough onto a floured surface and knead lightly until it forms a cohesive ball. Wrap it in plastic wrap and refrigerate for at least 30 minutes.
  5. Preheat your oven to 375°F (190°C).
  6. Remove the dough from the refrigerator. On a floured surface, roll it out into a large rectangle about 1/4 inch thick.
  7. Sprinkle the chocolate chips and sesame seeds evenly over the dough surface.
  8. Starting with a long edge, roll the dough tightly into a log. Slice the log into 1-inch thick rolls and place them on a baking sheet lined with parchment paper.
  9. Brush the tops of the rolls with the beaten egg and sprinkle with additional sesame seeds.
  10. Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown and p■.
  11. Allow the rolls to cool slightly before serving.
