1 cup Ritz crackers, crushed
1/2 cup shredded cheddar cheese
1/2 cup breadcrumbs
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
1 pound ground beef (80/20 preferred for moisture)
1 large egg
1/2 cup milk
1/4 cup ketchup (for the meatloaf mixture)
1/4 cup ketchup (for topping)
Additional shredded cheddar cheese (optional, for an even cheesier crust)
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the crushed Ritz crackers, shredded cheddar cheese, breadcrumbs, garlic powder, onion powder, salt, and black pepper. Mix well.
Add the ground beef, egg, milk, and 1/4 cup of ketchup to the dry mixture. Mix until well blended.
Transfer the mixture into a greased loaf pan or form into a loaf shape on a lined baking sheet.
Spread the remaining 1/4 cup of ketchup on top of the meatloaf.
Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (70°C).
Let the meatloaf rest for 10 minutes before slicing.
