  1. In a large mixing bowl, combine the chopped pistachios, quick oats, cocoa powder, and shredded coconut. Mix well.
  2. In a separate bowl, whisk together the almond butter, honey or maple syrup, vanilla extract, and melted coconut oil until smooth.
  3. Pour the wet ingredients into the dry mixture. Stir until well combined and a cohesive dough forms.
  4. Line an 8-inch square baking pan with parchment paper. Transfer the mixture to the pan, pressing it firmly and evenly.
  5. Melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Pour over the pistachio mixture, spreading it evenly.
  6. Sprinkle the chopped pistachios over the top.
  7. Refrigerate the pan for at least 2 hours, or until the bars are firm and easy to cut.
  8. Once set, lift the treats out of the pan using the parchment paper. Cut into squares or bars and serve.
