1 cup corn, canned or frozen, thawed
1/2 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 cup cooked ground beef or turkey
2 cups Doritos Locos Taco flavor, crushed
1 cup sour cream
1/2 cup mayonnaise
1 packet taco seasoning mix
1 tablespoon lime juice
Shredded cheese (optional)
Extra cilantro for garnish (optional)
Lime wedges for serving (optional)
Instructions
Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside and let cool completely.
Prepare the Vegetables: While the pasta is cooking, chop the cherry tomatoes, bell peppers, red onion, and cilantro. Ensure thawed and drained if using frozen corn.
Cook the Protein: In a skillet over medium heat, cook the ground beef or turkey until browned. Stir in one packet of taco seasoning and follow packet instructions. Let cool before combining with other ingredients.
Make the Dressing: In a medium bowl, whisk together sour cream, mayonnaise, taco seasoning mix, and lime juice until smooth.
Combine Ingredients: In a large mixing bowl, combine the cooked pasta, chopped vegetables, seasoned meat, and dressing. Stir gently until all ingredients are evenly coated.
Add Doritos: Just before serving, fold in the crushed Doritos to maintain their crunch.
Chill and Serve: Cover the salad and refrigerate for at least 30 minutes before serving. Garnish with shredded cheese, additional cilantro, and lime wedges if desired.
