2 pounds boneless, skinless chicken thighs or breasts
1 large onion, sliced
2 bell peppers (any color), sliced
4 cloves garlic, minced
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon chili powder
Salt and pepper to taste
1 cup chicken broth
1 tablespoon olive oil
Fresh cilantro, chopped (optional)
Lime wedges (optional)
Instructions
Start by slicing the onions and bell peppers and mincing the garlic. Prepare the chicken either whole or cut into bite-sized pieces.
In a bowl, mix the cumin, paprika, chili powder, salt, and pepper. Rub this seasoning blend evenly over the chicken pieces.
Place the sliced onions, bell peppers, and minced garlic at the bottom of the crockpot.
Lay the seasoned chicken on top of the vegetables in the crockpot.
Add the chicken broth and olive oil over the chicken. Stir gently to mix.
Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
Once cooked, remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the pot and stir it into the vegetables and juices.
Spoon the crockpot chicken with peppers and onions into bowls, garnishing with fresh cilantro and a squeeze of lime juice.
