1 cup all-purpose flour (or gluten-free flour)
1/2 cup whole wheat flour (optional)
1 teaspoon salt
1 teaspoon baking powder
1 tablespoon sugar
1/4 cup olive oil
1/2 cup water (adjust as necessary)
1 tablespoon dried oregano
1 tablespoon dried thyme
1 tablespoon dried rosemary
1 teaspoon garlic powder
1 teaspoon onion powder
Freshly cracked black pepper to taste
Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, whisk together the all-purpose flour, whole wheat flour, salt, baking powder, sugar, and dried herbs.
Create a well in the center of the dry ingredients and pour in the olive oil and water. Mix until a dough forms.
Transfer the dough to a lightly floured surface and knead gently for about 2-3 minutes until smooth.
Divide the dough into two portions and roll out one portion to about 1/8-inch thickness between two sheets of parchment paper.
Cut the rolled-out dough into preferred shapes and sizes, docking them with a fork to prevent puffing.
Transfer the cut crackers to a baking sheet lined with parchment paper.
Bake for 12-15 minutes, or until golden brown and crisp.
Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
