4 cloves garlic, minced
½ cup parmesan cheese, grated
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon salt (adjust to taste)
½ teaspoon pepper (freshly ground for best results)

Instructions
Preheat the oven to 425°F (220°C).
Wash and scrub the potatoes thoroughly. You can peel them if you prefer.
Slice each potato lengthwise into wedges, about ¾ inch thick.
In a large mixing bowl, combine the olive oil, minced garlic, oregano, thyme, salt, and pepper. Add the potato wedges and toss until evenly coated.
Sprinkle the grated parmesan cheese over the coated potato wedges and toss gently.
