1 ½ pounds ground beef
1 cup breadcrumbs
1 large egg
½ cup milk
1 small onion, finely chopped
2 cloves garlic, minced
2 tablespoons Worcestershire sauce
1 tablespoon ranch seasoning mix
Salt and pepper to taste
4 large russet potatoes, peeled and cubed
1 cup sour cream
1 cup shredded cheddar cheese
¼ cup butter, melted
½ teaspoon garlic powder
½ teaspoon onion powder
1 cup shredded cheese (optional)
Chopped green onions or parsley for garnish
Instructions
Preheat the oven to 375°F (190°C).
In a large mixing bowl, combine the ground beef, breadcrumbs, egg, milk, chopped onion, minced garlic, Worcestershire sauce, ranch seasoning, salt, and pepper. Mix well until all ingredients are evenly incorporated.
Transfer the meat mixture to a greased 9x13-inch baking dish and form it into a loaf shape.
In a separate bowl, combine the cubed potatoes, sour cream, shredded cheese, melted butter, garlic powder, onion powder, salt, and pepper. Mix until the potatoes are well coated.
Spoon the potato mixture over the meatloaf, spreading it evenly to cover the top.
Bake for 60 minutes, or until the meatloaf is cooked through and the potatoes are tender.
If desired, sprinkle an additional cup of shredded cheese over the top during the last 10 minutes of baking.
Once baked, remove from the oven, let cool for a few minutes, and garnish with chopped green onions or parsley before serving.
