1/2 cup feta cheese, crumbled (optional)
1/4 cup sunflower seeds or pumpkin seeds
1/4 cup fresh parsley or cilantro, chopped
1/3 cup olive oil
3 tablespoons apple cider vinegar
2 tablespoons honey or maple syrup
1 teaspoon Dijon mustard

Instructions
In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, bell peppers, carrots, corn kernels, and red onion. Toss gently to ensure an even distribution of ingredients.
In a small bowl or jar, combine the olive oil, apple cider vinegar, honey, Dijon mustard, and a pinch of salt and pepper. Whisk or shake until well combined and emulsified.
