  2. Prepare the zucchini: Wash the zucchini thoroughly, then grate it using a box grater. Squeeze out excess moisture.
  3. Mix dry ingredients: In a large mixing bowl, combine the all-purpose flour, baking powder, garlic powder, and salt. Whisk them together.
  4. Combine wet ingredients: In a separate bowl, whisk the egg and olive oil, then add the grated zucchini.
  5. Incorporate the mixtures: Pour the wet mixture into the dry ingredients and gently fold together.
  6. Add cheese: Stir in the shredded mozzarella cheese and Italian seasoning.
