1 medium zucchini (about 1 cup grated)
1 large egg
1 tablespoon olive oil
1 cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
1 teaspoon Italian seasoning (optional)
Fresh herbs (like basil or parsley) for garnish
Instructions
Preheat your oven: Set your oven to 425°F (220°C).
Prepare the zucchini: Wash the zucchini thoroughly, then grate it using a box grater. Squeeze out excess moisture.
Mix dry ingredients: In a large mixing bowl, combine the all-purpose flour, baking powder, garlic powder, and salt. Whisk them together.
Combine wet ingredients: In a separate bowl, whisk the egg and olive oil, then add the grated zucchini.
Incorporate the mixtures: Pour the wet mixture into the dry ingredients and gently fold together.
Add cheese: Stir in the shredded mozzarella cheese and Italian seasoning.
Shape the breadsticks: Line a baking sheet with parchment paper, transfer the dough onto the sheet, and shape it into a rectangle about ½ inch thick. Score the dough into breadstick shapes.
Top with cheese: Sprinkle reserved mozzarella and Parmesan cheese over the shaped dough.
