1 small onion, diced
2 cloves garlic, minced

1 cup frozen mixed vegetables (peas, carrots, corn)
3 medium sweet potatoes, peeled and cubed
2 tablespoons olive oil
1 cup shredded cheddar cheese, preferably sharp
1/2 cup breadcrumbs
1 tablespoon chopped fresh parsley (for garnish)
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, toss the cubed sweet potatoes with olive oil, salt, and pepper until well coated. Spread them evenly on a baking sheet lined with parchment paper and bake for 25-30 minutes, or until tender and slightly caramelized.
While the sweet potatoes are baking, heat a large skillet over medium heat. Add the ground beef, diced onion, and minced garlic. Cook until the beef is browned and the onion is translucent, about 5-7 minutes.
