6 cups fresh baby spinach, washed and dried
2 cups fresh strawberries, hulled and sliced
1/2 red onion, thinly sliced
1/2 cup feta cheese, crumbled
1/4 cup roasted almonds or walnuts, roughly chopped
1/4 cup extra virgin olive oil
2 tablespoons balsamic vinegar
1 tablespoon honey
1 teaspoon Dijon mustard
Salt and freshly ground black pepper, to taste
Instructions
In a large salad bowl, combine the baby spinach, sliced strawberries, and red onion. Toss gently to mix the ingredients well.
In a small mixing bowl, whisk together the olive oil, balsamic vinegar, honey, and Dijon mustard. Season with salt and pepper to taste. Whisk until emulsified.
Drizzle the dressing over the salad, taking care to coat the greens evenly. Use salad tongs to toss the salad until all ingredients are lightly coated.
Sprinkle the crumbled feta cheese and chopped nuts over the top.
