  1. In a large bowl, combine the flour, yeast, sugar, and salt. Make a well in the center and add warm milk, eggs, and butter. Mix until a dough forms.
  2. Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for about 1 hour or until doubled in size.
  3. Meanwhile, make the custard. In a saucepan, heat the milk with the vanilla bean until just simmering. In a separate bowl, whisk together egg yolks, sugar, and cornstarch until pale and thick.
  4. Slowly pour the hot milk into the egg mixture, whisking constantly. Return the mixture to the saucepan and cook over medium heat until thickened, stirring constantly, about 5 minutes. Remove from heat and stir in butter. Let cool completely.
  5. After the dough has risen, roll it out to about 1/2 inch thick on a floured surface. Use a donut cutter to cut out circles. Cover and let rise for another 30 minutes.
  6. In a deep fryer or large pot, heat oil to 350°F (175°C). Fry donuts in batches for 2-3 minutes on each side or until golden brown. Drain on paper towels.
  7. Once donuts are cool, fill a piping bag with the custard. Poke a hole in each donut and pipe in the custard until filled.
