  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the flour, baking powder, and salt. Whisk together.
  3. Add the cold, cubed butter into the flour mixture. Use your fingertips to rub the butter into the flour until the mixture resembles coarse crumbs.
  4. Stir in the sugar until evenly distributed. Create a well in the center of the mixture.
  5. In a separate bowl, whisk together the egg and milk. Pour this mixture into the well of the dry ingredients.
  6. Using a fork, gently mix the wet and dry ingredients until just combined.
  7. Turn the dough out onto a floured surface. Lightly knead it about 5-6 times to bring it together.
  8. Pat the dough into a 1-inch thick round. Cut the dough into 8 equal wedges or circles.
  9. Place them on the prepared baking sheet, leaving space between each scone.
  10. Brush the tops of the scones with a little milk or beaten egg.
  11. Bake in the preheated oven for 15-20 minutes or until golden brown.
  12. Remove from the oven and allow to cool slightly on a wire rack. Serve warm with clotted cream and your favorite jam.
