Ingredients
Scale:
1 pound ground beef
1 medium onion, diced
2 cloves garlic, minced
1 cup uncooked pasta (elbow macaroni or penne work well)
1 can (15 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 teaspoon Italian seasoning
1 cup shredded cheese (cheddar or mozzarella)
Salt and pepper to taste
1 cup frozen mixed vegetables (optional)
1/2 cup breadcrumbs
2 tablespoons melted butter
1/4 cup grated Parmesan cheese
Instructions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
To the skillet, add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
Stir in the uncooked pasta, diced tomatoes (with their juices), tomato sauce, Italian seasoning, and season with salt and pepper. If using, add in the frozen mixed vegetables.
Pour the mixture into a greased 9x13 inch baking dish, spreading it out evenly.
Sprinkle the shredded cheese over the top of the casserole mixture.
In a small bowl, mix together the breadcrumbs, melted butter, and Parmesan cheese. Sprinkle this mixture evenly over the cheese layer.
Cover the baking dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the topping is golden brown and the casserole is bubbly.
Once baked, remove the casserole from the oven and let it sit for about 5 minutes before serving.
