1 cup all-purpose flour
1/4 cup granulated sugar (optional)
1 tablespoon baking powder
1/2 teaspoon salt
1 cup buttermilk
1/4 cup vegetable oil or melted butter
2 large eggs
1/2 cup shredded cheese (optional)
1/2 cup chopped jalapeños (optional)
Instructions
Preheat your oven to 425°F (220°C). Place your cast iron skillet in the oven to heat as well.
In a large bowl, whisk together the cornmeal, all-purpose flour, sugar, baking powder, and salt until well combined.
In a separate bowl, mix the buttermilk, eggs, and vegetable oil or melted butter until smooth.
Pour the wet ingredients into the dry ingredients and stir until just combined.
If desired, fold in the shredded cheese or chopped jalapeños for added flavor.
Carefully remove the hot skillet from the oven, pour a tablespoon of oil into the skillet, swirling it to coat the bottom.
Pour the cornbread batter into the hot skillet and return it to the oven.
