Instructions

  1. In a small bowl, combine smoked paprika, garlic powder, onion powder, ground cumin, salt, and black pepper to create the smoky chicken seasoning.
  2. In a separate bowl, whisk together olive oil and lemon juice. Add the dry seasoning mix to this and stir until well combined to form a marinade.
  3. Place the chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for more intense flavor.
  4. Preheat your grill to medium-high heat, about 375°F (190°C). Lightly oil the grill grates to prevent sticking.
  5. Remove chicken from the marinade, allowing excess marinade to drip off. Place the chicken on the preheated grill.
  6. Grill the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is golden brown with grill marks.
  7. Transfer the grilled chicken to a serving platter. Let it rest for 5 minutes to allow the juices to redistribute.
  8. Garnish with chopped fresh parsley and serve with lemon wedges on the side.
