1/3 cup erythritol or preferred diabetes-friendly sweetener
1 teaspoon vanilla extract
1 large egg
1/4 cup sugar-free chocolate chips (optional)
1/4 cup chopped nuts (optional)
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the almond flour, baking soda, and salt. If making the chocolate variation, add cocoa powder here.
In a large bowl, combine the applesauce, melted coconut oil, erythritol, vanilla extract, and egg. Beat until smooth and well incorporated.
Gradually add the dry ingredients to the wet ingredients, stirring gently until a dough forms. If adding toppings, fold them in at this stage.
Using a spoon or cookie scoop, drop dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
