Description
A delightful fusion of classic pecan pie flavors packed into a chewy, buttery cookie. Perfect for the holiday season or any sweet tooth craving.
Ingredients
Scale:
- 2 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 cup pecans, chopped (plus extra for garnish)
- ½ cup semi-sweet chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2–3 minutes.
- Incorporate the eggs one at a time, mixing well after each addition. Add the vanilla extract and blend until fully combined.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed just until incorporated.
- Gently fold in the chopped pecans and chocolate chips (if using).
- Using a cookie scoop or tablespoon, drop heaping spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10–12 minutes or until the edges are golden brown. The centers may look slightly underbaked.
- Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack.
