A delightful combination of sweet, juicy peaches enveloped in a tender, homemade dumpling dough, perfect for enjoying on a sunny afternoon or as a cozy family treat.
Ingredients
Scale:
2 cups all-purpose flour, sifted
1 tablespoon baking powder
1/2 teaspoon salt
1/4 cup granulated sugar
1/2 cup unsalted butter, melted and slightly cooled
3/4 cup milk
4 cups fresh peaches, peeled and sliced
1/2 cup granulated sugar (for filling)
1 teaspoon cinnamon
1 tablespoon lemon juice
1/2 cup water
1 tablespoon butter (for topping)
Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, combine the sliced peaches, granulated sugar, cinnamon, and lemon juice. Mix gently and let sit for 10-15 minutes.
In another bowl, whisk together the flour, baking powder, salt, and sugar. Combine the melted butter and milk, then gradually add to the dry ingredients, stirring until just combined.
In a greased 9x13-inch baking dish, pour the peach filling and dollop the dumpling dough over the peaches.
Pour 1/2 cup of water gently around the edges of the baking dish and dot the top of the dumpling dough with small pieces of butter.
Bake for 30-35 minutes, or until the dumplings are golden brown and a toothpick inserted comes out clean.
Let cool for about 10 minutes and serve warm, optionally with vanilla ice cream or whipped cream.
