  1. In a medium skillet, heat a tablespoon of vegetable oil over medium heat. Add the diced onion and sauté for about 5-7 minutes, or until the onions are soft and translucent. Remove from heat and let cool slightly.
  2. In a large mixing bowl, combine the creamy mashed potatoes, sautéed onions, shredded cheddar cheese, flour, egg, garlic powder, salt, and pepper. Stir until all ingredients are well incorporated.
  3. With clean hands, take a handful of the potato mixture and shape it into a patty about 1/2 inch thick. Repeat with the remaining mixture and let the formed patties rest in the refrigerator for 15-30 minutes.
  4. In the same skillet used for the onions, add the remaining tablespoon of vegetable oil and heat over medium-high heat until hot.
  5. Carefully place the potato cakes in the skillet and fry for about 4-5 minutes per side, or until they are golden brown and crispy.
  6. Once fried, transfer the cakes to a plate lined with paper towels to drain excess oil and serve warm.
