- 1/2 cup granulated sugar
- 1 tablespoon baking powder

- 2 large eggs
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 1/4 cup unsalted butter, melted
- 1/2 cup granulated sugar (for topping)
- 1 tablespoon ground cinnamon (for topping)
- Powdered sugar (for dusting)
- Chocolate sauce (for drizzling)

Instructions
- In a mixing bowl, combine the flour, sugar, baking powder, salt, and cinnamon (if using). Mix the dry ingredients well.
- In a separate bowl, whisk together the eggs, milk, vanilla extract, and melted butter until fully combined.
- Pour the wet mixture into the dry ingredients. Stir gently until just combined. Allow the mixture to rest for 10 minutes.
- In a deep frying pan, heat about 2 inches of vegetable oil to 350°F (175°C).
- Once the oil is hot, drop spoonfuls (about 1 tablespoon) of the dough into the oil. Fry for about 2-3 minutes on each side, or until golden brown.
- Using a slotted spoon, remove the fried mini beignets from the oil and place them on a plate lined with paper towels.
- While the beignets are still warm, roll them in cinnamon sugar or dust them with powdered sugar.
- If desired, fill the beignets with your chosen fillings using a piping bag. Drizzle with chocolate sauce if preferred.
