Mini Beignets

  1. In a mixing bowl, combine the flour, sugar, baking powder, salt, and cinnamon (if using). Mix the dry ingredients well.
  2. In a separate bowl, whisk together the eggs, milk, vanilla extract, and melted butter until fully combined.
  3. Pour the wet mixture into the dry ingredients. Stir gently until just combined. Allow the mixture to rest for 10 minutes.
  4. In a deep frying pan, heat about 2 inches of vegetable oil to 350°F (175°C).
  5. Once the oil is hot, drop spoonfuls (about 1 tablespoon) of the dough into the oil. Fry for about 2-3 minutes on each side, or until golden brown.
  6. Using a slotted spoon, remove the fried mini beignets from the oil and place them on a plate lined with paper towels.
  7. While the beignets are still warm, roll them in cinnamon sugar or dust them with powdered sugar.
  8. If desired, fill the beignets with your chosen fillings using a piping bag. Drizzle with chocolate sauce if preferred.
