1 pound of honey garlic sausage, sliced into bite-sized pieces
1 pound of baby potatoes, halved
1 tablespoon olive oil
1 teaspoon smoked paprika
Salt and pepper, to taste
1 bell pepper, sliced (optional)
1 onion, sliced (optional)
1/4 cup honey
3 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon apple cider vinegar
Instructions
In a small bowl, whisk together honey, minced garlic, soy sauce, and apple cider vinegar until well combined. Set aside.
In a large skillet over medium heat, add olive oil. Once hot, add the halved baby potatoes. Season with smoked paprika, salt, and pepper. Cook for about 10-12 minutes until golden brown and fork-tender.
Add the sliced honey garlic sausage to the skillet with the potatoes. Cook for an additional 5-7 minutes until browned and heated through.
Stir in the sliced bell pepper and onion, cooking for 3-4 minutes until tender.
Pour the garlic honey glaze over the sausage and potatoes. Stir well and cook for an additional 2-3 minutes to allow the glaze to caramelize.
Remove from heat and let it rest for a few minutes. Serve warm, garnished with fresh herbs if desired.
