  1. In a large mixing bowl, combine the flour and salt. Create a well in the center and add the eggs. Slowly pour in the milk while whisking continuously to avoid lumps. Add the melted butter and vanilla extract (if using) and whisk until the batter is smooth and slightly thin. Let the batter rest for at least 30 minutes.
  2. Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with a small amount of melted butter. Test the heat by sprinkling a few drops of water on the surface; if they dance and evaporate quickly, the pan is ready.
  3. Pour about 1/4 cup of batter into the center of the pan. Quickly tilt and swirl the pan to spread the batter evenly into a thin layer. Cook for 1-2 minutes, or until the edges start to lift and the bottom is lightly golden brown.
  4. Use a spatula to gently lift the edges, then flip the crepe over and cook for an additional 30 seconds to 1 minute. Transfer to a plate and repeat with the remaining batter.
  5. Once all crepes are cooked, fill them with desired fillings, folding or rolling them as preferred. Serve warm with your choice of toppings.
