Golden Spinach & Cheese Puff Pastry is a delightful blend of flavors and textures that is sure to impress at any gathering. This recipe highlights flaky layers of puff pastry enveloping a creamy, cheesy spinach filling that is both savory and satisfying.
2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 large egg
2 cloves garlic, minced
Salt and pepper to taste
1/4 teaspoon nutmeg (optional)
1 egg, beaten (for egg wash)
Sesame seeds or poppy seeds (optional, for garnish)
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, combine the chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, minced garlic, nutmeg, and the beaten egg. Season with salt and pepper to taste and mix well.
On a lightly floured surface, unfold the thawed puff pastry sheets and roll each sheet out to smooth out creases.
Cut the pastry into 4-inch squares, creating approximately 12 squares from each sheet.
Place a generous tablespoon of the filling in the center of each puff pastry square, being careful not to overfill.
Fold the corners of each pastry square over the filling to form a triangle or pocket. Pinch the seams to seal tightly, and use a fork to crimp the edges.
Brush the tops of each pastry with the beaten egg.
