2 ripe mangoes, peeled and cubed
1 pineapple, peeled, cored and chopped into bite-sized pieces
2 kiwis, peeled and sliced
1 papaya, seeded and cubed
1 cup watermelon balls
1 cup strawberries, hulled and halved
1/4 cup fresh lime juice
2 tablespoons honey (or agave syrup for a vegan option)
1 teaspoon grated fresh ginger
1/2 cup unsweetened shredded coconut, lightly toasted
1/4 cup chopped fresh mint leaves
Instructions
In a large mixing bowl, combine the mangoes, pineapple, kiwis, papaya, watermelon, and strawberries. Toss gently to ensure even distribution of the fruits.
In a small bowl, whisk together the lime juice, honey, and grated ginger until well combined.
Pour the dressing over the fruit mixture. Toss the fruits gently with the dressing using a large spoon or spatula until they are evenly coated.
