A delightful and easy way to prepare fish that combines the fresh brightness of lemon with the rich depth of garlic.
Ingredients
Scale:
4 (6-ounce) fillets of white fish (such as cod, tilapia, or halibut)
1/4 cup fresh lemon juice (about 2 large lemons)
3 tablespoons extra virgin olive oil
4 cloves garlic, minced
1 teaspoon dried oregano
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Lemon slices (for garnish)
Instructions
Preheat your oven to 400°F (200°C).
In a small bowl, whisk together the lemon juice, olive oil, minced garlic, oregano, salt, and pepper until well combined.
Place the fish fillets in a shallow dish or a resealable plastic bag. Pour the marinade over the fish, ensuring each fillet is well-coated. Let it marinate for at least 15 minutes, or up to 1 hour in the refrigerator.
Lightly grease a baking dish with cooking spray or a little olive oil. Place the marinated fish fillets in the dish, skin-side down (if applicable), and pour any remaining marinade over the top.
Bake in the preheated oven for 12-15 minutes or until the fish flakes easily with a fork and is opaque throughout.
Once baked, remove the fish from the oven and allow it to rest for a minute. Garnish with freshly chopped parsley and lemon slices before serving.
