Doritos Taco Salad

  1. In a large skillet, over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula (approximately 6-8 minutes). Drain any excess fat.
  2. Sprinkle the taco seasoning over the beef. Stir in 2/3 cup of water, reduce the heat, and let it simmer for about 5 minutes, or until the sauce thickens.
  3. While the beef is cooking, chop the lettuce, halve the cherry tomatoes, dice the red onion, and rinse the black beans.
  4. In a small bowl, combine the ranch dressing with the taco seasoning. Stir well to mix thoroughly.
  5. In a large bowl, layer the lettuce, tomatoes, black beans, corn, and red onion. Add the cooked ground beef on top. Toss gently to mix.
  6. Just before serving, sprinkle the crushed Doritos over the salad.
  7. Pour the prepared ranch dressing over the top of the salad, tossing gently to combine.
  8. Serve immediately.
